Orange Pound Cake
If you are in the mood for something sweet yet refreshing, try this orange pound cake. Like traditional pound cake recipes, the main ingredients are butter, sugar, eggs and flour with the added twist of orange juice and orange zest.
An easy pound cake recipe, this orange juice cake is the perfect dessert to serve after a heavy meal or for an afternoon snack with coffee or tea.
The orange zest is the key to making this cake. Zest refers to finely grating the outer layer of an orange, being careful to grate only the orange part of the peel, not the white part as it is bitter.
While good served plain, the easy to make orange glaze adds another level of orange flavor and makes this scrumptious cake even more moist and delicious.
Orange Pound Cake Recipe
Ingredients
- 1 cup (2 sticks) butter, at room temperature
- 2 cups granulated sugar
- 6 eggs
- 2 cups all purpose flour
- 1/2 teaspoon orange extract
- 3 tablespoons orange juice
- 1 tablespoon lemon juice
- 2 oranges, zested
Orange Glaze- 2 cups powdered sugar
- 4 tablespoons orange juice
- 1/2 teaspoon orange extract
Preparation
1. Preheat oven to 350 degrees F. Grease and flour Bundt or tube pan.
2. In a large bowl, with mixer set to medium high speed, cream the butter and sugar together. Add eggs, one at a time, beating well after each addition. Reduce mixer speed to low and gently beat in flour, orange extract, orange juice, lemon juice and orange zest. Pour batter into prepared pan.
3. Bake for 45 to 50 minutes or until a wooden toothpick inserted into center comes out clean. Remove from oven and cool in pan for 10 minutes. Remove cake from pan and continue to cool on wire rack, top side up.
4. To prepare Orange Glaze: Combine powdered sugar, orange juice and orange extract. Pour half of glaze over warm cake. As cake cools, occasionally spoon the glaze over the top and sides of cake until all of the glaze has been absorbed.
