Easy Mini Cheesecake Recipe
This easy Mini Cheesecake Recipe can be mixed and ready for the oven in just minutes. With an easy crust of vanilla wafers topped with creamy cheesecake, it is a perfect addition to your dessert recipe collection. A simple cheesecake recipe, it can be varied with many different cheesecake toppings. You can top these mini cheesecakes with fresh fruit, canned pie filling, caramel, chocolate or cookie crumbs to create many different desserts. Yield: 3 dozen Ingredients
- 36 vanilla wafers
- 4 packages (8 ounces each) cream cheese, at room temperature
- 1-1/2 cups granulated sugar
- 4 eggs, at room temperature
- 2 teaspoons vanilla extract
- Fresh strawberries for garnish
Preparation Preheat oven to 350 degrees F. Line muffin pan with paper liners. Place a vanilla wafer in each paper lined muffin cup. Set aside. In a medium bowl, with mixer on medium speed, beat cream cheese until soft and creamy. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract. Spoon cream cheese mixture over wafers, filling lined muffin cups almost full. Bake for 12 to 15 minutes. Remove from oven and let cool in muffin pans to room temperature. Transfer them to a cookie sheet, loosely cover with plastic wrap and refrigerate for at least 4 hours. To serve, top each with a whole or sliced strawberry.
