Easy Cake Mix Cookies Recipe
Yield: 2 to 2-1/2 dozen
Ingredients
- 1 package (18.25 ounces) cake mix, any flavor
- 2 eggs
- 1/3 cup oil
Preparation
1. Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.
2. In a large bowl, combine cake mix, eggs and oil. Stir to mix well. To make dough easier to handle, place dough in refrigerator for 15 minutes to chill.
3. Shape dough into 1-inch balls. Place cookie balls on cookie sheet or baking pan. If thinner cookies are desired, slightly flatten the cookie balls using the back of a spoon or a glass.
4. Bake for 7 to 10 minutes or until slightly golden, being careful not to overcook. Transfer cookies to wire racks to cool. Store cooled cookies in an air-tight container.

Banana Cookie Recipe: Use a banana cake mix. For extra flavor, add 1 package chocolate or peanut butter chips. Bake as directed.
