Chocolate Oatmeal Cookie Recipe
Fill up your cookie jar in no time at all with this chocolate oatmeal cookie recipe. Good any time of the year, these tasty cookies are especially good for the holidays. Full of oats, they can have more or less chocolate flavor, depending on your personal desires.
This cookie recipe using cake mix is quite flexible and can be modified in many ways to suit different tastes. If you want less chocolate and more oatmeal taste, use a yellow, white or butter cake mix and add one package of chocolate chips.
If you want your cookies with even more chocolate flavor, use a chocolate or devil’s food cake mix and add one package of semisweet chocolate chips.
However you make them, this easy cookie recipe yields about four dozen delicious cookies.
Chocolate Oatmeal Cookie Recipe
Yield: about 4 dozen 2-inch cookies
Ingredients
- 1 package (18.25 ounces) chocolate or devil’s food cake mix
- 2 cups quick cooking oats, uncooked
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 2 large eggs or 3 medium eggs
- 1 tablespoon vanilla extract
- 1 package (6 ounces) semisweet chocolate chips, optional
Preparation
1. Preheat oven to 325 degrees F. For easy clean up, line the cookie sheets with parchment paper. Otherwise, leave the cookie sheets ungreased.
2. In a large bowl, combine cake mix, oats and sugar. Mix together with a spoon until well blended. Set aside.
3. In a separate bowl, with mixer set at medium speed, combine oil, applesauce, eggs and vanilla. Beat until well combined, about 1 minute. Add egg mixture to cake mix mixture. Stir well. Add chocolate chips, if using, and stir to blend. Drop by teaspoonfuls about 2 inches apart on ungreased cookie sheet.
4. Bake for 10 to 12 minutes. Remove from oven and let cool in pans for 5 minutes. Transfer cookies to wire racks to cool completely.
